The cellar of the Deprade Jorda winery, built in 1934, is a symbol of heritage and modernity. Although it has evolved over time, it retains historic elements, testifying to our rich history and commitment to winemaking traditions. These architectural and design elements reflect our respect for the past, while incorporating the innovations needed to produce superior wines.
Vinification and ageing
At the Deprade Jorda winery, the entire winemaking process takes place on site, from harvest reception to bottling. Our grapes, harvested manually or mechanically depending on the plot, go through specific stages: de-stemming and crushing, direct pressing for whites and rosés, maceration for reds… Each stage is carried out with the utmost care to guarantee the exceptional quality of our wines.
For our barrels, we give preference to French oak from the forests of central France, in collaboration with cooperages with historic expertise. These quality barrels bring balance and complexity to our wines, which are aged for 6 to 12 months, depending on the type of wine. The use of these barrels sublimates the wine’s natural aromas, adding subtle woody nuances that enrich the taste profile of each cuvée.
In our cellar, our wines rest patiently to reach full maturity. Some dry wine cuvées are aged for 12 months in oak barrels, with special monitoring. Weekly topping-up for several weeks is essential. Stirring of the lees is justified several times a week to add body and volume to our wines.

The Deprade Jorda shop is a meeting place for wine enthusiasts, new initiates and those curious to discover the independent winemaking profession.
Our doors are open every day of the year. Guided tours of the winery and vineyards are available by appointment from May to October.
