At the foot of the Albères mountains. A clay-limestone soil, composed of clay in which limestone is found in the form of pebbles, it is a soil of sedimentary origin.
Destemmed and crushed, the fermenting must is mutated (grain mutage) with neutral wine alcohol. It then rests in full vats for several months. Mutation consists of adding alcohol to the must during vinification to interrupt fermentation. Deprived of oxygen, the yeasts stop their activity, allowing the wine to retain a portion of its natural, unprocessed sugar.
Aged in new oak barrels or 2-3 wines, for at least 5 years before bottling.
Alcohol content : 16% Vol.
Color : Tuilé color, clear and brilliant. Nose : Notes of Rancio, intense and slightly spicy. Mouth : Aromas of candied fruit and spices. Beautiful aromatic complexity.
